What is aioli?
Well, genuine aioli originally had nothing to do with mayonnaise, believe it or not. It started out as a popular sauce in the Mediterranean that consisted of a whipped emulsified mixture of olive oil, garlic, and salt that resulted in a creamy, textured flavor. But getting that creamy texture of olive oil and garlic takes a lot of effort, so a shortcut version was born. Hello mayonnaise.
These days we can't obtain enough of the creamy, dreamy stuff that is basically the ingredients for mayonnaise (store bought or not), with added flavors like garlic and lemon, among others.
Learning how to make garlic aioli is basically foolproof. Once you've tried it, you'll be looking for an excuse to do it. Then you can try adding a few different flavor options as listed below.
- Spicy – For example, add one of your favorite spices Buffalo sauce, a pinch of paprika, chilli flakes or some Sriracha sauce. A bit of Dijon mustard as a kick would be kind too!
- Fried and smoky – For a milder garlic flavor, fry the garlic bulbs to add to your aioli. You can also add some toasted red peppers or sun-dried tomatoes for a sweet and smoky touch.
