We eat Mexican food at least twice a week. Our favorite! These burritos are on the menu tonight so I thought I'd share them with you. It tastes like a burrito mix Taquito and Enchilada. However, since they are not fried in oil, they are a bit lighter and healthier.
When I think of classic Mexican food, I think of chicken burritos. And instead of just eating at your favorite Mexican restaurant, you can prepare them at home too. This recipe isn't your average "cast it all on the tortilla" and calls it burritos. They're full of purposeful flavors and textures that make them delicious to the next level. I'm talking about genuine Mexican taste!
These baked chicken burritos have everything you love about Mexican food … soft Flour tortilla, Experienced shredded chicken, Coriander lemon pilaf, Kidney beans and lots of sticky melted cheese. Not to mention the cream Mexican-style green tomato sauce Sauce on top. Instead of curling up and serving right away, they're baked in the oven for 20-30 minutes. This simple extra step creates a crispy tortilla and a lovely and bubbly cheesy top. Takes burritos from the normal extraordinary!
Tips + variations
Heat the bread before filling. It helps to heat the bread in the microwave for about 10 to 15 seconds to make the bread more flexible when folded. When they're hot, they're more flexible and won't break as easily.
Connections. When you're short on time, use fried chicken instead of making it yourself. shredded chicken. Or, use microwave white rice instead of homemade cooking Coriander lemon pilaf.
Changes. Use gluten-free or whole wheat bread instead of flour. Or, replace the kidney beans with black beans or even fried beans.
SOS. The sauce adds another layer of flavor and prevents the tortillas from becoming overly crispy. You can use half and half instead of cream, or you can remove the cream all together and top with plain salsa verde. You can also make this recipe without sauce. Chicken Taquito.
Fill and fold the dumplings as indicated. Do not add cheese and sauce.
Instead of baking, wrap each burrito individually, tightly in foil or plastic wrap.
Store in a freezer or bag.
When you're alert to try, put it in the refrigerator to melt overnight.
