If you've been following me for a while you cognize I love dessert! I've been making these simple lemon sticks for a few years and they have always been very popular. You have the great amount of lemons and the thick peel is delicious. My parents are crazy about this recipe and my fame lemon cake.

I have to admit that lemon sticks aren't usually the first dessert I think of. Usually I'm more Chocolate chip cookie Girl, those lemon sticks are always in place when I do. Got this recipe from my mom and made a few changes my cousin suggested and it's definitely one of my modern favorite recipes. They're great for spring, and they're just delicious!

They have a wealthy butter dish, a delicious lemon filling and sweet powdered sugar on top. It has an incredibly cold taste and an excellent light and refreshing taste. Every bite that melts in your mouth is delicious!

  1. Cookie Shell: These sticks commence with the great cookie crust. It's super soft and delicious with a wealthy, buttery taste. It's made with a simple mixture of butter, powdered sugar, and flour and baked difficult (but not browned).
  2. Lemon filling: Next comes the sweet lemon filling. It doubles the lemon flavor (flavor + juice) and is super light and refreshing. It solidifies after cooling, but still remains a small sticky (but not runny). If you love everything lemon, this filling will be no exception.
  3. Granulated sugar: This layer is optional, but it definitely tastes different. It finishes the bars with the great sweetness. I like to use a sugar shaker (or a fine mesh strainer) to sprinkle powdered sugar on.

Cooking tips

  • Lemons. Make sure to use REAL lemon in this recipe for the top flavor. It definitely does everything Difference. If you prefer a sour lemon flavor, add 1 tablespoon of lemon peel to the filling (instead of 1/2 tablespoon).
  • Do not overcook the crust. Cook until the crust is difficult but doesn't turn brown. It may look a small overcooked when you take it out of the oven, but it continues to harden as it cools. If it's roasted in the oven, it's not soft and tender.
  • Don't let the filling turn brown. Follow the filling carefully and do not let it brown. If it's overcooked, the top of the filling can tear. Once the filling is done shaking, take it out of the oven. It will continue to install when it cools down.
  • Let it cool completely. This is one of those desserts that needs to cool completely before you can enjoy it. As tempting as it is to obtain a bite straight out of the oven, just don't do it! The filling takes some time to harden and the sticks need to cool in the refrigerator for a few hours. Believe me, it tastes the coldest!
  • Balloons. A few air bubbles on the sealant are perfectly normal, so don't panic! The air from mixing the eggs rises to the surface creating small air bubbles.
  • Smaller batch. You can cut the recipe in half and make the sticks in a smaller 9 × 9 baking sheet if you wish. Use the same oven temperature but cook a few minutes less than the crust and filling required. Be sure to keep an eye on both of them so they don't turn brown.

Storage + freezing

  • Warehouse: Lemon sticks are fresh in the refrigerator for up to 3 days as long as they are kept in an airtight container.
  • Freeze: Since the recipe is quite a bit, I usually freeze half of the batch. Cut into squares, they will freeze wonderfully and then placed in a sealed Tupperware container. I like to put a piece of parchment or wax paper between the layers so it doesn't stick.

Bowl:

  • one Cup Salted butter softened
  • 1/2 Cup Granulated sugar can be down with granulated sugar
  • 2 .. Glass All-purpose flour

Lemon filling:

  • 4th large eggs
  • 1 3/4 Glass Granulated sugar
  • 1/4 Cup All-purpose flour
  • 1/3 Cup freshly squeezed lemon juice about 3 lemons
  • 1/2 tablespoon Lemon peel
  • 1/2 teaspoon baking powder
  • Granulated sugar sprinkle
  • Preheat the oven to 350 ° F. If you want, put parchment paper in a 9 × 13 "glass pan.

  • In a medium bowl, mix the butter, sugar, and flour together with a cake cutter or mixer. Push it under the covers. Bake for 15-20 minutes or until firm. Don't let the brown.

  • In a separate bowl, whisk or whisk the eggs. Then add sugar, flour, lemon juice, lemon zest and baking powder. Whisk until everything is smooth and well mixed. Then pour it over the cooked crust.

  • Cook for another 20 minutes or until they are firm. Don't let the lemon turn brown. After hardening, take out of the oven and do not shake again. Let it cool down. When the bars cool, the filling is firm. It is normal to have air bubbles on top. Put it in the refrigerator for at least 1-2 hours.

  • After the sticks have cooled, sprinkle them with fresh powdered sugar and cut them into 24 bars. Store the bars in the refrigerator for 3 days or in the freezer for 3 months.

Note: Line your pan with parchment paper or foil to easily remove the sticks from the pan.
If you want more cake lemon flavor, add a tablespoon of lemon zest to the filling.
