EASY Carrot Cake Recipe (One Bowl)

Carrot cake tastes good all year round, but I especially enjoy serving it with our Easter brunch or dinner. It is one of the classic Easter desserts that everyone is always looking forward to. Coconut macaron Drizzle melted chocolate. So very tasty!

This carrot cake is a super moist and very tasty treat! The recipe is so simple to put together and is great for a small meal Table company. I also love that all you need is a bowl and a wooden spoon. No mixer required!

It's very moist and has an excellent pineapple sweetness. Plus the wealthy Cream cheese cream to die. I could eat from the spoon (okay, maybe I … shhh). There will likely be residual glaze so don't hesitate to just dip it in. Or rub graham crackers (or pretty much anything). This is one of my favorite childhood treats.

Carrot grater

BEST uses one of the keys to carrot cake freshly grated carrots. They make the cake super moist and delicious. Pre-shredded carrots are too large and often have lost a lot of moisture and fresh taste. Grating all of the fresh carrots at home will ensure that they retain their moisture and flavor to a large extent.

There are two ways to grate carrots:

  1. Hand rub. Using a hand grater is an simple way to grate carrots. Be sure to use the side of the grater with large holes. This method requires a small more elbow fat, but it does the job!
  2. Food processor. Use a food processor to make it faster. Shake the carrots several times until they break into small pieces (but not mashed).

NOTE: For this recipe, you will need roughly 2 medium-sized carrots to make 1 cup of wrapped, shredded carrots. You might want to buy a few extra in case that isn't enough. 🙂

Cooking tips

  • Pineapple. Be sure to strain the pineapple. Carrots already contain a lot of moisture. Adding crushed pineapple to the juice will affect the consistency of the cake.
  • Apple sauce. If you prefer, applesauce can be used in place of crushed pineapple.
  • Extra mixes. Feel free to mix extras like raisins, chopped nuts, or grated coconut into the batter. For even more flavor, you can fry the hazelnuts first.
  • Align the pan. The cake is super moist so be sure to use parchment paper and Cooking spray. You don't want it to stick to the pan!
  • Fried coconut. Fill the cake fresh before serving. roasted coconut. It adds incredible flavor and just the right amount of sweetness.
  • Doubling. Use a 9 × 13-inch baking sheet or two 9 × 9 veya circle baking trays to double the recipe.

You can't eat a carrot cake without it Cream cheese cream! The wealthy, tangy taste is the great complement to the sweet taste of the cake. After you've finished the recipe, you will likely have frosting left over. So you can save a small for later production. Cinnamon rolls or pumpkin pie. Or you Really Like frosting, add everything on top of the cake! I will not judge. 🙂

Variation: For a fun twist, add 1/2 cup of dulce de leche to the cream and a pinch of salt if desired. You can even make a fun caramel strudel by placing 9 dots on the cake and then twisting it with a knife. The caramel flavor adds a great touch and goes wonderfully with the other flavors of the cake.

Storage + freezing

  • To store: Place the cake in an airtight container and cover with a lid or plastic wrap / aluminum foil. It stays fresh in the refrigerator for about 3-4 days.
  • Freeze: If you want to freeze this dessert, I recommend cutting the cake into a square shape and then freezing it in a pan overnight. This allows the powder to harden so that it does not stick. Then wrap the cake squares in plastic wrap and place them in a zippered bag. Put in the freezer for 2-3 months. If you want to try it, remove the plastic wrap and thaw it in the refrigerator.

Carrot cake:

  • 1/2 Cup + 1 TB Vegetable oil
  • 1/2 Cup Granulated sugar
  • 1/2 Cup packaged brown sugar
  • 2 .. large eggs beaten
  • one Cup packaged freshly grated carrots about 2 large carrots
  • 1/2 Cup crushed pineapple emptied
  • 1 1/2 teaspoon vanilla
  • one Cup All-purpose flour
  • 1/2 teaspoon carbonate
  • one teaspoon baking powder
  • one teaspoon cinnamon
  • 1/2 teaspoon kosher salt

Cream cheese cream:

  • 3 ounce cream cheese softened
  • 3 tablespoon butter
  • 1-2 Glass Granulated sugar
  • one teaspoon vanilla
  • Preheat the oven to 350 ° F and place parchment paper on an 8 × 8 "pan. Spray lightly with baking spray.

  • In a large bowl, mix the oil and sugar with a wooden spoon. Next, mix the eggs, carrots, pineapple, and vanilla. Then mix the flour, baking soda, baking soda, cinnamon, and salt and mix until combined.

  • Pour the batter into the prepared pan and bake for 25-30 minutes, or until golden brown and a toothpick clear. Let the cake cool completely.
