Fudgy black bean cake | Sweet peas and saffron


These black bean muffins are sweet, filling, and very filling! The great way to satisfy your sweet tooth while keeping things lighter at the same time: no refined sugars, no grains, and 125 calories per cake!

I'm a sucker for a delicious dessert bar; Oat bars with chocolate tahini and Snack bars Some of my favorites on the blog. But the recipe I return to from time to time when I'm passionate about chocolate? That black bean cake!

When it comes to cake, let's face it: it's all about those delicious candies! I'm definitely a brownie fanatic, and you may remember a time when sweet peas and saffron were wildly filled with top desserts.

Nowadays it's all about satisfying those with a sweet tooth while maintaining good health. And these black bean muffins are INSANE lovely and will be swallowed by the whole family!

  • Black bean You need cooked black beans even when you're cooking on the stove, Immediate containeror just use canned beans. Measure 1 cup and make sure to drain after shaking.
  • Maple syrup You can trade it in for honey or brown sugar if you'd like; alternative sweeteners were not tested.
  • Coconut oil helps bring moisture and sweetness to the cake; You can replace it with butter or vegan butter. Make sure to use refined coconut oil to avoid excessive coconut flavor (if you don't like it!).
  • Egg I haven't tried flax eggs in this recipe and I don't cognize if it will work.
  • Espresso powder It brings a depth of flavor to the cakes and enriches the chocolate flavors; If you don't have espresso powder, replace it with instant coffee.
