There's something about a dinner with a plate that totally transforms me into the day. I like to use fewer plates and make great food in a simple setting. This Mexican casserole is one of those dishes and one of my favorite weekday foods. This is very simple, and definitely a simple baking dish that can arrive in handy in your recipe arsenal.

I like how much flavor this dish is packaged and how crispy tortilla chips are. We love to top it off with all of our favorites like shredded lettuce, cilantro, and tomatoes. Add a side of your favorite chips and Salsa and you're all alert for dinner! This casserole is a great and simple cinco de mayo dinner. Enjoy!

How to Make Mexican Chicken Stew

  1. MIX. In a medium bowl, mix the chicken, rice, beans, rotel, cream cheese, sour cream, and taco seasoning.

Cooking tips + varieties

  • Soft cheese. Be sure to soften the cream cheese before mixing. Put it on the counter about 30 minutes in advance to soften it to room temperature.
