Crispy air fryer eggplant | Sweet peas and saffron


This fried eggplant is crispy on the outside and soft on the inside! Covered with a crunchy parmesan panko bread, it is baked in just 5 minutes and is great as a snack or side dish.

So far, we've found the deep fryer is a great way to fry your favorite vegetables. Carrots or asparagus. Not only do they cook in a fraction of the time, but they also turn golden and soften perfectly.

To make this cool fried eggplant, I first tried dicing the eggplant and frying it in some oil. Unfortunately, the eggplant has become tough and uncomfortable.

Instead, we topped it with a mixture of parmesan, panko breadcrumbs, and thyme, and the results blew us away! Crispy on the outside, soft on the inside. Even my husband Ben (who lists eggplant as one of his 5 favorite dishes) enjoyed this one!

Ingredients for eggplant in the air fryer (with labels)
  • Aubergine- I used a standard size eggplant. You can also use Chinese eggplants, or even baby eggplants. Cut the cooking time and remove it from the fryer when the bread is golden and crispy
  • Fame- The flour will help the egg and pan stick to the eggplant. You can try gluten-free flour or almond flour instead of all-purpose flour. Neither have been tested, but I think both will work great!
  • Panko … These are Japanese style breadcrumbs and the key to the eggplant's crispy texture. You should be able to find them near the usual grocery store breadcrumbs. If you can't find these, the regular breadcrumbs will still work, but will be less crispy. Consider using pork bowls for low carbohydrates.
  • Parmesan cheese I recommend the freshly grated parmesan cheese as it gives this recipe the top flavor.
