  • Chicken breast- We're cooking 1 pound of boneless skinless chicken breast for this recipe; Swap boneless chicken breasts or boneless and skinless chicken legs (set the cooking time to 4-5 hours for both).
  • Adobo sauce + red pepper These give the salad a good smoke and flavor. Find them in a box in the Mexican grocery section of the grocery store. If you like it spicy, add a whole chipotle pepper (whole, we'll remove it later). If you want to reduce the heat, add adobo sauce and skip the chipotle pepper.
  • Vegetables- You can definitely obtain creative here, but I used a mixture of purple cabbage, bell pepper, and shredded carrots. See notes on substitutes below.
  • Tortilla strips This gives the salad a delicious crispy texture and hearty taste. However, if you plan to prepare the salad, you will need to add the tortilla strips just before serving, otherwise they will be juicy.

Step by step instructions

1. Cook the chicken in the 2.5 liter slow cookerMix together honey, chicken broth, salt, garlic, lemon juice, adobo sauce, and red pepper (if used). Chicken breast is added, covered and cooked over low heat for 3-4 hours.

2. Chop the chicken- Use tongs to remove the chipotle pepper and cast it away. Cut the chicken into strips with two forks. Alternatively, you can put it in a clean bowl and electric hand mixer.

portion Divide the chopped vegetables into four 2-bowl prep bowls. Add 1/2 cup of chicken to each bowl and 2 tablespoons of sauce over each prep bowl.

Business- Store in the refrigerator for up to 4 days.

FAQ

Is the recipe hot?

Adding a whole chipotle of pepper adds some excitement to this recipe. If you want to lower your voice, just skip the pepper. I recommend adding the Adobo sauce as it gives the sauce a kind smoky taste.

Can I commute the chicken?

Yes, you can replace boneless chicken breasts with boneless chicken or use boneless and skinless chicken legs. Increase the low cooking time to 4-5 hours.

Can I cook this in a larger slow cooker?

The warning for 5-6 liter slow cookers is that you need to cook a lot of chicken at one time. I recommend a smaller slow cooker (I like that 2.5 liter slow cooker) To cook 1 pound of chicken.

5 or 6 liter slow cookeryou have to double the recipe (the liquid is too lean and the chicken may dry out). You can freeze the half chicken later!

Can I use a low-carb sweetener?

Although I haven't tested it, I suspect this will be fine.

Will you serve this hot or cold?

Personally, I serve it cold, but that's entirely up to you!
