Whenever the weather gets a small colder, I long for warm and crispy root vegetables. I find them more calming and filling than other soft vegetables. This recipe is one of my favorite things to do with them and mine Roasted pumpkin, Sweet potato fries and Smooth carrots.

These fried potatoes and carrots are one of my family's favorite side dishes. It tastes very tasty and goes perfectly with almost any meat. How to fry potatoes and carrots

  1. CUT. Peel the carrots, then cut them into 2-inch pieces. Then cut the baby potatoes in 1/4 turn.
  2. SEASON. I love mixing vegetables, oil, and spices in a bowl and then placing them on a large baking sheet (make sure you spray nonstick spray first). I see the vegetables are covered more evenly this way. You can also do this directly on the baking sheet if you prefer for easier cleaning.
  3. ROAST IN THE OVEN. Bake in the oven at 400 ° F for about 15 minutes or until tender. Then turn it over with a spatula and cook for another 15 to 20 minutes.

Roasting tips

  • Cut vegetables. When you cut vegetables, you want them to be the same size so that they can cook evenly. I like to use baby potatoes because the slices are smaller than regular potatoes. Also, be careful not to cut the carrots too thick (aim for 2-inch pieces).
