Instant Pot Protein Pancake Bites are a fun alternative to pancakes baked in your Instant Pot! Works great for weekday breakfast or meal prep.

After using my silicone molds Instant Pot Egg BitesI started thinking about other uses … and immediately thought of pancake bites!

Just me Pancakes protein pancakesThese pancake bites are light and soft, but made with whey protein powder to keep you feeling full. They are simple to customize and kids absolutely love them!

Content notes

  • Fame– I used a mix of all-purpose and whole wheat flour. You can trade it in for 100% all-purpose or whole-grain white flour
  • Protein powder– I recommend the vanilla whey protein powder. In my experience, pea protein powder doesn't replace whey for pancakes, and vanilla adds extra flavor to pancake bites
  • Coconut oil– Use refined coconut oil to avoid a distinct coconut flavor. Exchange for vegetable oil or butter
  • Maple syrup– can be used instead of honey or brown sugar; alternative sweeteners not tested
  • Blueberry Choose smaller fruits, they can be used fresh or frozen. Do not thaw when using frozen food

Step by step instructions

Stir in the batterMix the flour, baking powder, and protein powder in a large bowl. Add the maple syrup, milk, eggs, and melted coconut oil, then mix until everything is well blended and there is no flour left. Fold the blueberry last, parting some for the tips of the pancake bites.

Add shapes– Spray oil on two silicone egg molds and distribute the batter evenly between them. Add 1-2 strawberries on top of the bite. Spray the caps of the forms and place the caps on the forms.

Immediate combination in the pot– Pour 1 glass of water into the stainless steel part of your instant pot (for 6 liters; 1.5 cups for 8 liters). Place the sheet metal base on the water and the shapes on the sheet metal base. Rotate the top mold slightly so that the egg bites don't sit directly on top of each other.

to bake– Put the lid on the pressure cooker, turn the valve to the "seal" position and cook under high pressure for 10 minutes. Do a fast press release and let the crepe bites cool for 10 minutes before removing them from the molds.

Can I do this in a bowl?

Yes, we mix them all in one bowl. I've also provided weights so you can weigh your items without the need for measuring cups.

Where do you obtain silicone molds from?

Are we using natural or rapid pressure relief?

For this recipe, we're using fast release pressure to make sure our pancake bites don't overcook. For rapid pressure relief, carefully move the vapor release lever from the "Seal" position to the "Vent" position.

Use extreme caution when making a fast release lever: never place your face, hand, or any other object on the valve while you release the steam.

How do you remove pancake bites from the mold?

It's important to spray oil or butter or oil into the molds before adding the pancake batter. Let the pancake bites cool for 5 minutes, then gently squeeze the mold out.

Variations

This is a very forgiving recipe and goes with a wide variety of options:

  • Fold 1/4 cup of mini chocolate chips
  • Replace blueberries with chopped strawberries or other fruit – Note: Don't use bulky or overly moist fruit as this can avoid pancakes from cooking properly.
  • Add 1 tablespoon of lemon or lime zest
  • Add 1/4 cup of chopped bacon
  • Add 1/2 cup of finely chopped carrots or zucchini (suppresses moisture)
  • Consider adding seasonings like cinnamon or nutmeg (commence with 1/2 teaspoon)
  • Add 1 / 4-1 / 2 cup of finely chopped hazelnuts (walnuts, walnuts)

Storage and rewarming

These pancakes are top served fresh, but can be stored for 2-3 days.

  • fridge– Cool completely, then store in an airtight container for up to 4 days.
  • Freeze– Let cool completely and store in an airtight container loosely wrapped in parchment paper. Alternatively, you can store them in a sturdy freezer bag with a straw to suck the extra air out of the bag. Freeze for up to 3 months.
  • unravel– Thaw in the refrigerator overnight.
  • warm up– Heat in the microwave until it has evaporated.

  • Mix the dough – Mix the flour, baking powder, and protein powder in a microwave-secure bowl or measuring cup. Add the maple syrup, milk, eggs and melted coconut oil, then mix until everything is well blended and there is no flour left. Fold the blueberry last, parting it for the tips of some pancake bites.

  • Add shapes– Spray oil on two silicone egg molds and spread the batter evenly between them (a cookie scoop will help – about 2 tablespoons per mold). Add 1-2 strawberries on top of the bite. Spray the caps of the forms and place the caps on the forms.

  • Combine immediately in pot Pour 1 glass of water into the stainless steel part of your instant pot (for 6 liters; 1.5 glasses for 8 liters). Place the coaster over the water and place the shapes on the coaster. Turn the top mold slightly so that the egg bites are not sitting directly on top of each other.

  • To bake- Put the lid on the instant pot, turn the valve to the "seal" position and cook under high pressure for 10 minutes. Do a fast pressure relieve and let the crepe bites cool for 10 minutes before removing them from the molds.

  • Enjoy- Serve with maple syrup and extra fruit.

1- You can use 1 1/3 cup white whole wheat or all-purpose flour instead of the whole wheat and all-purpose flour mixture. Alternative flours such as gluten-free or almonds have not been tested.
2- This recipe hasn't been tested with pea protein powder and I don't think it will work equally well. I recommend using vanilla flavored powder as it gives pancake bites a delicious taste.
3- Maple syrup can be replaced with honey or your favorite liquid sweetener
4- Any milk or non-milk (like unsweetened almond milk) will work in this recipe.
5- I recommend the small blueberries in this recipe as the large ones pictured here add a lot of juice to the pancake bites. If you're using frozen blueberries, don't thaw them first.
