This is definitely something you can do if you want to, but this recipe skips that step in favor of a fast prep as we find that without the browning step it has a lot of delicious taste.

To fry the pork shoulder, select the frying function of the instant pot, add 2 tablespoons of olive oil and fry until all the edges are golden. You should make sure you clean the instant pot with half a cup of water or broth to make sure nothing gets stuck as it can trigger the burn warning.

The kind thing about Instant Pot is that it cuts the cooking time significantly when making pulled pork. 90 minutes is the great time to break down the difficult collagen fibers in the pork shoulder. If the roast is on the small side, 60 minutes may be enough.
