This is definitely something you can do if you want to, but this recipe skips that step in favor of a fast prep as we find that without the browning step it has a lot of delicious taste.

To fry the pork shoulder, select the frying function of the instant pot, add 2 tablespoons of olive oil and fry until all the edges are golden. You should make sure you clean the instant pot with half a cup of water or broth to make sure nothing gets stuck as it can trigger the burn warning.
