Necessary ingredients for salmon patties

Content notes

  • salmon– Canned salmon makes these meatballs affordable and a great way to cook out of your pantry. We use three 125 g cans. Some people prefer to remove bones and skin to develop tissues, although they are a great source of calcium and other nutrients.
  • Eggs– Dumplings must be tied together; Egg alternatives not tested
  • Breadcrumbs– provides structure and makes it easier to process meatballs. I used regular crumbs, but panko can work too.
  • Mayonnaise- adds flavor and moisture to salmon patties; I use avocado mayonnaise but it works normally too.
  • Dill- Even when I use fresh dill in these photos, dry dill works
  • Lemon- We only use lemon peel to add a light citrus flavor. You may want to buy organic lemon while you are using the skin

Step by step instructions

You can find the ingredient quantities on the recipe card.

  1. Mix the ingredients together Use a spatula to mix salmon (drained, shredded, and skin / bones removed if you wish), eggs, mayonnaise, salt, breadcrumbs, lemon zest, and dill in a large bowl.
  2. Measure the pattiesUsing a 1/2 cup measuring cup, pack the mixture tightly into the glass, then tap it in the palm of your hand.
  3. Create meatballs. Tap to create a meatball that is no thicker than 1 inch and is even in the meatballs.
  4. Cook the meatballs. Preheat the fryer to 390 ° F. Sprinkle the basket with oil, then add meatballs to the basket. Depending on the size of your air fryer, you can cook 2-4 meatballs at a time. Spray the top of the salmon patties. Cook for a total of 8 minutes (no turning required).

Recipe notes

Create patties of equal size

To ensure that these salmon dumplings are cooked at the same time, it's important to make dumplings of equal size. I like to use a measuring cup for this as this is more consistent than blending.

You also want to make sure the patties are the same thickness throughout. Lightly touch the shape you want with your hands.

Don't overcrowd

It is very important that you don't overfill your salmon patties in the air fryer as this will block air circulation and avoid them from becoming crispy. For the crispiest salmon patties, make sure there is space between them and they don't touch. This means that depending on the size of your fryer, you may need to cook them in batches.

Use high heat

In testing this recipe, I found that lower temperatures resulted in drier and less crispy salmon patties. When I used the highest temperature in my air fryer (200 ° C) the outside was kind and crispy while the inside was still soft and tasty.

Spray twice for extra crispness

Another tip for crispy salmon patties? Spray the meatballs with oil at the beginning of the cooking time (this will help them not stick to the basket while cooking and will help them obtain gold) and another time in the last 1-2 minutes of cooking time. This oil supplement adds some moisture to the outside of the patties and helps them obtain even more golden brown.

Basket and air fryers

This recipe can be found in both Phillips basket-style air fryers (similar to

), and a Instant Pot Vortex air fryerand the cooking times were very similar.

  • Basket of air fryer – 8 minutes, no flip
  • Air fryer – 8 minutes, trays turn in half

Be careful with salmon patties in the deep fryer as they can easily cook at different times depending on the location of the oven.

Food preparation + storage

Pre-cooking

Note that salmon patties lose some moisture after cooking, storing, and reheating.

  1. Let cool completely and store in an airtight food preparation container in the refrigerator for up to 4 days.
  2. Heat the air fryer to 350 ° F and place the salmon patties in the basket. Spray oil. You may want to do a second spray just before serving.

Make Patties + Save

My preferred way of preparing these is to save them before cooking. This way it is made the first time you cook it, and the meatballs taste as good as if they were cooked right after they were made.

  • Fridge- Shape the meatballs and place them in a large bowl for meal preparation. When stacking them, place a piece of parchment paper in between. Store for up to 48 hours and then cook as directed on the recipe card. If the patties are cold when they are placed in the air fryer, add another minute to cook time.
  • Freeze- Prepare the patties and place them on a parchment-lined baking sheet. Freeze for 2 hours until the solid is frozen, then transfer to a food preparation or freezer bag and place parchment paper between the patties. Squeeze out as much air as you can and freeze for up to 3 months. Defrost and then cook as directed on the recipe card.
