Simple ingredients you need

  • Olive oil- Use a high quality oil for your dressing, like extra virgin olive oil.
  • Balsamic vinegar- If possible, select a good quality balsamic vinegar. The penniless balsamic vinegars are watery and lean in texture and taste. Here is a great article when choosing a good quality balsamic vinegar!
  • Dijon mustard- This adds the magical Pizzazz to all of my vinaigrettes. Dijon acts as an emulsifier, which simply means that oil and vinegar stay together longer. If oil and vinegar separate, your salad will not have the right taste. it will be oily in places and excessively lively in other places. Dijon also gives the dressing a certain "je ne sais quoi" taste and does not taste like mustard at all. Don't skip it!
  • Maple syrup (or honey) – A small sweetness is needed to tame the wort. In trendy vinaigrettes, honey and maple syrup are easily interchangeable in the same ratio. Brown sugar also works in an emergency!

Oil-vinegar ratio

Traditional vinaigrettes have an oil-vinegar ratio of 3: 1, but I find that much too mild. When I go to the trouble of making a vinaigrette from scratch, I want to be able to try it, and I prefer a 1: 1 ratio

Consider the oil to vinegar ratio flexible and play around with it to obtain your great balsamic vinaigrette.

  • tangy and fat – ratio of vinegar to oil 1: 1
  • milder vinegar to oil ratio of 1: 2
  • traditional (+ very mild) – 1: 3 ratio of vinegar to oil

You can prepare this balsamic vinaigrette and keep it in the fridge for up to 4 days. I like to triple (or even quadruple) the batch so I always have them on hand!

Oil and vinegar separate during storage in the refrigerator. Just shake your vinaigrette until the oil and vinegar are evenly mixed again before dripping on your salad.
