Bruschetta is a great way to eat fresh summer vegetables in the garden. Whenever there are plenty of tomatoes and basil, this is one of my favorites. Basil sauce, Cucumber and tomato salad and Corn and tomato salad. So fresh and delicious!

One of my favorite summer starters is the fresh bruschetta with tomatoes and basil. I love growing tomatoes and basil in my garden and this recipe is a great way to use them. The two flavors together taste fantastic and make the great light and refreshing snack. I like to make bruschetta while having fun and barbecuing on the terrace. It is always a great success!

What is bruschetta?

Bruschetta is an Italian word for toasted toast. The classic bruschetta recipe usually includes toast mixed with olive oil, filled with a mixture of fresh tomatoes and basil. The flavors arrive together to be super fresh and delicious.

How to make bruschetta

Put chopped tomatoes, olive oil, balsamic vinegar, garlic and basil in a medium bowl. Stir until everything is well mixed. Then add salt and pepper to taste. Store the bruschetta in the refrigerator for at least 15 minutes so that the flavors can be marinated together.

Service bread

Usually bruschetta is served with a French baguette. The slices are smaller with crusty edges that bite them perfectly. They also roast in the oven very quickly. You can definitely use other types like Italian or French bread, but the slices obtain bigger.

Roast in the oven

  1. Preheat the oven to 425 ° F and line up a baking sheet with foil.
  2. Cut the baguette into 1/2 inch slices and gently brush it with olive oil.
  3. Cook until lightly browned.

Bread grill

Place the baguettes on both sides of the grill for a few minutes (turn them over when you see the lightly charred grill marks).

Quick tips

  • Use ripe tomatoes and drain excess water after chopping.
  • Fresh mozzarella is a great addition. Feel free to mix it up a bit.
  • For more taste, Balsamic mystery just before serving.
  • Fill the baguette slices with bruschetta before serving. You don't want the bread to dry.
  • Do Chicken bruschetta the next day with leftovers.

Other ways to use fresh tomatoes:

  • 1 1/2 glasses finely chopped Roman tomatoes (about 4-5)
  • one tablespoon olive oil
  • one tablespoon balsamic vinegar
  • one teaspoon chopped garlic
  • 3-4 tablespoon chopped fresh basil
  • salt and pepper (taste)
  • one French baguette
  • 2 .. tablespoon olive oil
  • Combine tomatoes, olive oil, balsamic vinegar, garlic and basil. Pepper and salt to taste. Leave in the fridge for 15 minutes.

  • Preheat the oven to 425 ° F. Line up a baking sheet with foil and set it aside.

  • Cut the French baguette into 1/2 inch slices. Spread olive oil on top. Cook until lightly browned (approx. 3-5 minutes).

  • The top bread just before serving with bruschetta. Enjoy!

Can drizzle Balsamic mystery on top of it before serving. I make my own mini baguette with my homemade one french bread recipe. Only round the breads longer so that the slices are smaller than normal French bread.
