You can use any summer pumpkin (green or yellow) to make pumpkin boats! Make sure you select one straight and stay away from curvy so that you can pack it side by side in the baking dish. You should also avoid oversized pumpkins as they are too large to fit in a 9-inch pan. You may need to cut some ends out of the pumpkin for it to work.


For this recipe, we fill our pumpkin boats with pulled pork, but you can be creative and fill it with all kinds of proteins:

  • After cooking– You can now keep the pumpkins in a closed container in the refrigerator for up to 4 days (divide them in half and place them in 2 cups of food preparation containers and store them in larger 8 cups of food preparation containers). Heat in a closed container at 350 ° C for 15 minutes or heat in the microwave.


Freeze uncooked zucchini peels in a closed food preparation container or a metal cooking container. If you freeze in a metal saucepan (as shown), you can put it in the oven and cook frozen! If you freeze in a glass bowl, we recommend thawing it completely before cooking.
