I customized this Orzo pasta salad from Giada's cookbook. The most important thing I changed is that I only did half the dressing with fewer onions and more tomatoes. It adds fresh mint and I tried fresh mint (it definitely adds a kind touch) but I just don't think it is necessary to buy it for this recipe. If it's in your garden, add a small bit of it.   • 4th cups chicken broth
  • 1 1/2 cups orzo
  • 15 ounce Beans can be beans (drained and rinsed)
  • 1 pint Grape tomatoes (Divided in two parts)
  • 1.2 Cup chopped red onion
  • 1.2 Cup chopped fresh basil
  • 1.2 Cup extra virgin olive oil
  • 1/4 Cup Red wine vinegar
  • 2nd tablespoon Lemon juice
  • 1.2 Tablespoon honey
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Heat the broth in a large bowl over high heat. Add the orzo and cover it lightly with a lid. Let it cook for 7 minutes or until cooked. Strain and let cool completely.

  • For dressing, whisk olive oil, vinegar, lemon juice, honey, salt and pepper (or shake in a glass). Add more salt and pepper to taste.

  • Mix the orzo with beans, tomatoes, onions, basil and enough salad to coat. If you serve later in the day, reserve some dressing to cast the Orzo noodles just before serving. Let the orzo salad cool until alert to serve.
