I made this lemon lasagna dessert a few months ago and found that I never shared it with you. And now that summer is officially here, this is the great time to add it to your "To Do" list. It's just that good!

This lemon dessert starts with a golden oreo bowl and is then filled with a delicious cheesecake filling. We could stop there completely and it would be delicious, but the tart lemon taste is an excellent addition. Next lemon pudding and a Whipped cream. My favorite part of the desserts fried coconut above. I can eat these things alone. Mmmm … if you like, you can also grate lemon zest.

Reasons to love this lemon dessert:

  • No cooking required! The stove does not need to be burned on a hot summer day. No cooking is required.
  • Make-before: This meal is great to prepare in advance. It needs to be refrigerated for at least 3-4 hours, so don't hesitate to do it the day before!
  • Filled with lemon flavor. Both lemon instant pudding and fresh lemon peel give this sweet lasagna the top lemon taste.
  • Cool and refreshing: On a hot summer day there is nothing better than a cold dessert. This dish is very refreshing!
  • Fried coconut: Because what don't you like about fried coconut ?! This bowl is great and adds a great touch!

How to make lemon lasagna

First, put 9 × 13-inch plates down and set them aside.

Destroy the oreo. Place the golden oreo in a zippered bag and crush it on the counter with a rolling pin. You can also use a food processor, but be sure to blow only a few times. You still want them to be a bit chunky, not super good.

Put the melted butter in the bag and mix until everything is well mixed. Then press the oreo mixture under the plate and freeze for 5 minutes.

Do the beaten topping. In a medium sized bowl, stir the cream cheese until frothy. Add 2 tablespoons of milk and sugar and mix until blended. Then let 1 cup cool.

Spread the mixture lightly with a spatula on the Oreo bowl (photo above). Freeze for another 5 minutes.

Make lemon pudding. Mix lemon pudding, lemon zest and milk in a separate bowl. Whisk until it is thick, then spread over the beaten top layer (photo above). Place the refrigerator in the refrigerator for another 10 minutes to make it difficult.

Take it out of the fridge and spread the remaining powder on the lemon pudding layer. Then fill in freshly roasted coconut or, if desired, with more lemon zest.

Store in the refrigerator until serving. Place in the refrigerator for at least 3-4 hours before serving.
