A black bean fajita pasta pot

A pot of pasta is an absolute hero in our house. We love that Sun Dried Tomato Pasta with White Beans and the A pot of pasta with chicken and white cheeseBut if we miss something unconventional, we will go for this fajita pasta!

If you've never bought it before, a cup of pasta will cut your socks. When you cook pasta sauce, it takes up a lot more flavor than you cook sauce + pasta separately.

And these black bean fajita noodles make the "simple" factor a notch because you don't have to fry anything … just pour the ingredients into the pot and let it do its magic.

This also means that you can mount it forward as a freezer set-top bowl!

For extended assembly

  • 2 pepper (In slices)
  • 1.4 Cup Red onion (In slices)
  • 15 oz canned tomatoes (or 19 ounces; both work well)
  • 15 oz canned black beans (drained and rinsed or 19 ounces)
  • 7 oz can be corn kernels (1 cup)
  • 2 teaspoon pepper powder
  • 1 teaspoon cumin
  • 1 teaspoon Red pepper
  • 1 teaspoon salt

Add fresh while cooking

  • 1 Cup camp
  • 2 cups small pasta shapes (6.5 ounces; see note *)

Just before serving

  • 1.2 lime (Juice; 1 tablespoon)
  • 1 Cup Mozzarella cheese (Decomposition)
  • Combine all the ingredients, including pasta and broth, in a medium-sized saucepan. Cover and cook, then reduce the heat and let cook for 15 minutes, stirring every few minutes.

  • Spread lime juice and mozzarella evenly and mix until melted.

  • (Optional) Serve with lime slices and coriander.

How to install in the future:

  • Combine all forward-mounted components in a large food preparation container or a high-performance freezer bag.

  • Store up to 4 days in the refrigerator or up to 3 months in the freezer.

  • If frozen, completely thaw before cooking as described above. You may have to remove the pan lid for the last 5 minutes of the cooking time to allow the liquids to drain.

Black beans can be replaced by two large chicken breast fillets cut into bite-size cubes.
